The Ever So Versatile Egg Sandwich


One of my favorite breakfasts is the egg sandwich. You can even make your egg sandwich any way you want it. My favorite thing about an egg sandwich is how fast they are to make. You can make them even faster by making a couple days worth in advance, place everything on a plate, place it in the fridge, then just layer and microwave in the morning.

You can make it healthy by using whole grain bread or English muffin, Egg Beaters or egg whites, low-fat cheese, and turkey sausage.

You can fatten it up by using white bread or English muffin, regular cheese, real eggs, and high fat juicy sausage or bacon.

My personal favorite is the "happy medium." I use a sourdough English muffin, low-fat cheese and turkey sausage. As for my eggs, I always have to use two because Bubba LOVES eggs so I have to share.

  2. Used to Love breakfast burritos. Used to make them up about 30 at a time so that my husband and kids could grab one for the microwave and eat it in the car. That was many years ago now. Bittersweet memory..

  3. We're on the same wavelength! I made these two days ago. Used co-jack cheese and some bacon, an egg, but only half an English muffin because we were running out of muffins!

  5. I rarely eat breakfast {i know bad bad bad} but I love making my own egg sandwich. Ham, cheese, and egg is my favorite:))

  9. I just had breakfast for dinner tonight with eggs, cheese, veggie sausage patties, and bagels! :)

    My quickest breakfast is usually something that I can just grab and take with me like a bagel or cereal bar or something, even though I'm sure that's not the healthiest option.

  11. YUM! Love how you gave a healthy version and also the fattened up version! Thanks for sharing. Like your 'happy medium' choice too.

    I love an egg sandwich! When my daughter was in high school and would have friends spend the night, she would always make everyone an egg sandwich in the morning... It became her specialty. :)

  13. I fry eggs and cut Sungold cherry tomatoes in half and throw them in after the eggs are done. Then toast some bread, spread butter, and top with eggs and tomato goodness!

  14. I love making these egg sandwiches! I haven't made for a long time because I like the totally fattening version lol. I'll have to try it the other way!

    My favorite quick go to breakfast is a bowl of good whole grain cereal w/fruit, or some instant oatmeal.
