This is one of my favorite recipes. You would not believe how good it tastes, and how easy it is to make:
Pumpkin Butter
1
can of pumpkin (15 oz.)
1
cup sugar
1
1/2 tsp. cinnamon
1/4
tsp. nutmeg
1/4
tsp. ginger
1/8
tsp. cloves
3
Tbsp. lemon juice
**In
place of the spices, you may substitute about 1 1/2 tsp. of pumpkin pie
seasonings.
Microwave
Method:
Combine
and stir all ingredients together in a microwave safe glass bowl. Cook on high
for 7 to 8 minutes stirring every 2 minutes. Let cool.
Stovetop
Method:
Combine
all ingredients together in a heavy saucepan. Bring to a boil. Boil 5 minutes
stirring constantly.
Makes
about 2 cups.
This is great served warm!
